I-Hop Pancakes

1-1/4 Cups All-Purpose Flour
1 Egg
1 Cup Buttermilk
1/4 Cup granulated Sugar
1 Tsp. Baking Powder, heaping
1 Tsp. Baking Soda
1/4 Cup Vegetable Oil
Non-Stick Spray
Preheat skillet over medium heat. In a blender or with a mixer combine all of the ingredients until smooth. Spray pan with non-stick spray. Pour the batter into the pan forming a 5" circle. After bubbles appear on surface and edges appear brown, flip pancake. They should be light brown. Cook on the other side for the same amount of time. Serve with butter and syrup.
