Oatmeal Soda Bread

2-1/2 cups Oatmeal, finely processed in a processor

2 cups Buttermilk
2-1/2 cups Flour
1 tsp. Baking Powder
1 tsp. Salt
Extra Flour for dusting
Pour meal into a bowl. Stir buttermilk into oats, cover with plastic wrap, let steep for 12 hours. When steeping is complete, preheat oven to 350 degrees and butter pan.

In a mixing bowl, sift the other ingredients together. Stir in steeped oatmeal and mix well. Lightly dust work surface, turn dough out onto the dusted area and knead dough a couple times to form a soft ball. Press dough into a round ball about 2" thick. Use a sharp knife to cut a criss-cross into the top of bread. Place bread in pan. Bake until golden brown, about 25-30 mins. Remove from oven and cool on a wire rack. Serve bread warm with butter.
