Spicy Chicken Mac


1 (7-1/4 oz.) Pkg. Macaroni & Cheese Dinner
1 Tbs. Olive Oil
1 to 1-1/2 lbs. boneless Chicken Breast, cut into bite size pieces
1 (14-1/2 oz.) can Diced tomatoes and green chilies, drained
1 (14-1/2 oz.) can diced tomatoes, drained
1 can Cream of Chicken Soup
1/2 cup Shredded Mexican Style Cheese, or Colby Jack or Chedder
Prepare dinner as directed on box. Heat oil in large skillet on Med-Hi heat. Add chicken, cook and stir 5 mins. or until lightly browned and cooked through. Reduce heat to med. and stir in tomatoes and soup. Cook 5 mins., stirring occasionally. Add the prepared dinner stirring until well blended. Sprinkle with cheese and cover. Cook 5 mins. or until cheese is melted.
