Spectacular Overnight


2-1/2 lbs. shredded Cabbage
1 Med. red Onion, thinly sliced
1/2 cup Green Pepper, chopped
1/2 cup sweet Red Pepper, chopped
1/2 cup White Wine Vinegar
1/2 cup Vegetable Oil
1/2 cup Sugar
2 tsp. Dijon Mustard
1 tsp. each Salt, Celery, and Mustard Seed
In a 4 qt. bowl, combine cabbage, onion and peppers. In saucepan, combine the vinegar, vegetable oil, sugar, dijon mustard, salt, celery, and mustard seed. Bring to a boil. Cook and stir for 1 min. Pour over vegetables in bowl and stir gently. Cover and refrigerate overnight. Mix well before serving. Makes 12-16 servings.
