Kickin' Creamed Corn

2 tbsp. Olive Oil

1/2 cup Andouille Sausage, diced small

2 cups Petite Sweet Corn

1/2 cup Onions, diced

1 tbsp. Garlic, chopped

1 cup Heavy Cream

1/2 cup Red Pepper, diced
1/2 cup Scallions, chopped
Heat oil in a large saute' pan over medium-high heat and add the andouille. Cook for 30 secs. and add corn. Continue to cook for 4-5 mins. until corn is heated through. Add the onions and garlic and cook for 1 more minute. Add the cream, red pepper and scallions. Season with salt and pepper and cook for 2 more mins.
