Fluffy Pumpkin

Cheesecake Pie

2 pkgs. (8 oz.) Cream Cheese, softened
2/3 cup Sugar
2 tsp. Pumpkin Pie Spice
2 Eggs
1 can (15 oz.) Pumpkin
1 unbaked "extra serving" Pie Crust
In a large bowl, mix cream cheese on med. speed until fluffy. Add sugar and spice, mix until combined. Add eggs, 1 at a time, mixing until just combined after each addition. Stir in pumpkin. Pour into crust. Bake at 350 degrees for 35-40 mins. Cool 1 hr. on wire rack. Refrigerate at least 3 hrs. before serving. Garnish with Cool Whip.

Yield: 10 servings.
