Fish Florentine

1-1/2 or 2 lbs. White Fish, fillet
3 (10 oz.) pkgs. Frozen Chopped Spinach, drain & thaw
2 cups Chicken Broth
3 cloves Minced Garlic
1/2 stick Butter
2 tsp. Thyme
4 tbsp. Flour
1/2 cup Parmesan Cheese
Preheat oven to 350 degrees. Saute garlic in butter. Add flour, blend to make paste. Gradually add chicken broth to make a sauce. Pour half sauce into a rectangular baking dish, spread spinach on top of sauce, sprinkle thyme over spinach. Lay fish fillets on top of spinach. Salt and pepper to taste. Pour rest of sauce over fish. Sprinkle parmesan cheese on top. Bake 30 mins.

Makes 4 servings.
