Corn Casserole

1/2 cup Butter

3/4 cup Green Pepper, finely chopped

1/2 cup Onion, diced

1 can (17 oz) Cream Style Corn

8.5 oz. pkg. Corn Muffin Mix

1 can (17 oz) Whole Kernel Corn, undrained

1 cup Cheddar Cheese, shredded

3 Eggs, well beaten
Spray 2 pt. casserole dish w/ non-stick spray. In a small skillet, melt butter. Add green peppers and onions. Saute until crisp tender. In a large bowl, combine both cans of corn, eggs, and corn muffin mix. Blend well. Add onion mixture, mix well. Pour into prepared dish, sprinkle top with cheddar cheese. Bake at 350 degrees for 55-65 mins. or until firm and set. Let stand 5 mins. before serving.
