Baptist Grasshopper


2 (9") prepared Graham Cracker Pie Crusts, chocolate
32 large Marshmallows
1/2 cup Milk
1 tbsp. Mint Extract
2 tsp. Chocolate Extract
1-1/2 cups Heavy Whipping Cream
3 drops Green Food Coloring
In a large saucepan, combine marshmallows and milk. Stir over medium heat until marshmallows are completely melted. Chill until mix holds its shape when dropped from a spoon. Slowly mix in mint extract and chocolate extract, stirring until all ingredients are combined completely. Beat whipping cream in chilled bowl until it forms stiff peaks. Gently fold whipping cream into marshmallow mix. Add food coloring to desired color. Spread into pie crust, cover and refrigerate at least 4 hours.
