Slow Cooker King Ranch


4 c Cooked Chicken, diced
12 Flour Tortillas
1 med Onion, chopped
2 cans (10 oz) Cream of Chicken Soup
1 can Tomatoes & Chiles
4 tbsp Quick Cooking Tapioca
4 c Cheddar Cheese, grated
In a large bowl, mix chicken, soup, tomatoes, chiles, and tapioca. Rip 3 tortillas into pieces and line bottom of 5 qt slow cooker. Add 1/3 chicken mix, top with 1/3 onion and cheese. Repeat layers of tortillas, chicken mix, onion, and cheese 2 more times. Cover, cook on low for 6-8 hours or on high for 3 hours. Can also spray bottom of slow cooker with PAM first or double the amount of tomatoes & chiles.
