Southern Sweet Potato


4 oz Butter, softened
2 c Sweet Potatoes, cooked and mashed
2 c Granulated Sugar
1 can (5 oz) Evaporated Milk
1 tsp Vanilla
3 Eggs, beaten
1-1/2 tsp Cinnamon
1 c Chopped Pecans
2 prepared Pie Shells, unbaked
Mix butter, potatoes, sugar, and evaporated milk until well blended. Add vanilla, eggs, and cinnamon. Mix well. Pour into prepared pie shells. Spread pecans over top of pie filling. Bake in a 350 degree oven for about 1 hour, until set. Makes 2 pies.
