Bacon Cheddar Potato


3 Baking Potatoes, sliced 1/4" thick
1 lb Bacon, thickly sliced
1 lb Cheddar Cheese, grated
1 med Onion, diced
Salt & Pepper, to taste
Preheat oven to 325 degrees. Line a 6" non-stick baking dish with bacon slices, arranging them in a radial pattern and starting with one end of bacon in the center of the dish and the other end draped over the edge. When the entire surface is covered, sprinkle with salt and pepper and then add a layer of sliced potatoes to cover the bottom. Sprinkle with grated cheese, 1/2 c of onions, and salt and pepper. Repeat layers until they are slightly above top of the dish. Fold the bacon, 1 slice at a time, up and over top of potato mound toward center. Overlap each slice and repeat until top is completely and neatly covered with bacon. Press down and cover with a lid. Place on a baking sheet to catch drippings. Bake 3 hrs. Remove lid and bake 15 min at 350 degrees to crisp bacon.
