Popcorn Cake

2 tsp plus 1/4 c Vegetable Oil

12 c Popped Popcorn, plain, unsalted, unbuttered

2 c M&M candies

1 c Cocktail Peanuts, lightly salted

1 stick, unsalted Butter

1 lb Marshmallows
Grease a large tube or bundt cake pan with 2 tsp of oil and set aside. In large bowl, mix popcorn with M&M candies and peanuts. In small saucepan, melt butter, remaining oil, and marshmallows over med-low heat, stirring occasionally. When melted, pour over popcorn, stir to combine. Pour mix into prepared pan, pressing down to fit. Cover with aluminum foil to keep moist and let rest until firm, 3-4 hrs. To serve, invert cake pan onto large cake plate or platter. Shake gently to release. Serve at room temp.
