Chocolate-Covered Ritz


1-1/4 sleeves Ritz Crackers (about 45)

1 c Brown Sugar
1/2 c Butter
1/3 c Creamy Peanut Butter
1-1/2 c Semi-Sweet Chocolate Chips
Heat oven to 425 degrees. Line a 9x13 pan with foil and spray lightly with non-stick spray. Line pan with Ritz crackers, they should overlap, so feel free to break them into pieces if you wish. Melt together butter, peanut butter, and brown sugar over medium heat until sugar has just dissolved. Pour mix immediately over crackers and spread evenly to distribute. Place in oven for about 5 min or until it just starts to bubble. Remove from heat immediately and sprinkle with chocolate chips. Let sit for about 1 min, then spread chocolate evenly. Place in freezer for about 20 min then break apart.
