No Bake Strawberry


1 (3 oz) package Strawberry Flavor gelatin

1 c Boiling Water
1 (8 oz) package Cream Cheese, softened
1 c White Sugar
1 tsp Vanilla Extract
1 (5 oz) can Cold Evaporated Milk
9" prepared Graham Cracker Pie Crust
Dissolve strawberry gelatin in boiling water in a bowl. Cool in fridge until thick, but not set, about 20 min. Beat cream cheese, sugar, and vanilla extract until smooth. Beat evaporated milk in separate bowl with electric mixer until whipped and thick. Gradually pour gelatin mix into evaporated milk, beating constantly. Fold in cream cheese mix to form cheesecake filling. Set graham cracker crust on a baking sheet or plate to maintain stability. Pour cheesecake filling into crust. Refrigerate until set, about 3.5 hours.
