Blackberry Cake Mix


1 box 18.5 oz White Cake Mix
1 tsp Baking Powder
2 tbsp Flour
2/3 c Milk
1/3 c Oil
3 Eggs
2 c Fresh Blackberries
Preheat oven to 375 degrees. Line muffin pan with paper liners. Reserve 1 tbsp dry cake mix to toss blackberries in so they don't sink. In large bowl, mix cake mix with baking powder and flour. In separate bowl, mix milk, oil, and eggs. Add wet ingredients to dry ingredients and stir to combine. Add blackberries. Pour batter into prepared muffin cups. Bake 15-20 min. Makes about 16 muffins.
Variations: make chocolate muffins by using chocolate cake mix and chocolate chips/make raspberry or blueberry muffins by substituting those berries/make vanilla or French vanilla muffins by using vanilla cake mix.
