Easy Home-Made Corn


1 Can (15oz) Whole Kernel Corn
1 Egg
1/4 Cup Flour
Salt and Pepper to Taste
1 Finely chopped Jalapeno Pepper (de-seeded)
1 Teaspoon Baking Powder

Creamy Ranch Lite Salad Dressing for dipping cooked corn nuggets
Drain Corn. Remove half of the corn and save in a small bowl. Using the can to mix in, add the Egg, Salt and Pepper, Chopped Jalapeno, and Baking Powder then mix well. Add the flour as needed to make the consistency of dough. You may not need the 1/4 cup. Use enough to hold corn together. Drop by teaspoon full into grease that has been preheated to 375 degrees. After cooking for a minute or so, flip over and cook other side until they are golden brown. Drain on paper towels and serve with Salad dressing. Use can to mix second batch of nuggets following the above directions.
