Rice & Beef Porcupines




1 lb. Extra Lean Ground Beef
1/2 Cup uncooked rice (rinsed)
1 Teaspoon each Salt & Black Pepper
1 cup water
1/2 Cup Chopped Onion
2 Cans Tomato Sauce (8 oz)

Mix meat, rice, onion and seasoning.  Form into small round balls and fry in 2 tablespoons of vegetable oil.  Turning frequently until light brown but not crisp.  Add the tomato sauce and water.  Mix well.  Cover and simmer about 45 minutes.  Makes 4 servings.
