Jalapeno Pie




1/2 lb. Sharp Cheddar Cheese, coarsely grated
1/2 jar Ya Ya Peppers
4 Eggs, beaten
Salt & Pepper to taste

Preheat ovens to 350 degrees.

Spray 9" pie pan with Pam, line bottom of pan with peppers. Cover peppers with cheese. Pour eggs over cheese and pat down on top.

You can add chopped onion, cilantro, or ground cumin. Bake 25-30 min. Allow to cool and then cut into pie shaped pieces. In lieu of Ya Yas, you can use jalapeno peppers cut into strips. Drain juice and put into jar with 1 cup sugar, cover with lid. Allow to set overnight. Drain peppers and continue.
