Whisk flour, cornmeal, sugar, baking powder, baking soda, and salt in large bowl. Whisk buttermilk, eggs, and butter in separate bowl. Stir liquid mix into dry mix until blended smooth. Heat lightly oiled griddle or skillet over med-high heat. For each pancake, pour 1/4 c batter on griddle and cook until browned, about 1-1/2 min. Flip and cook until brown on each side, about 1 min. Continue with remaining batter. |
