Heat oil in a large saute' pan over medium-high heat and add the andouille. Cook for 30 secs. and add corn. Continue to cook for 4-5 mins. until corn is heated through. Add the onions and garlic and cook for 1 more minute. Add the cream, red pepper and scallions. Season with salt and pepper and cook for 2 more mins. |
