Beefy Jalapeno Cornbread




1 cup cornmeal  
1 cup milk

Combine 1 cup of cornmeal, milk, eggs, salt, soda, bacon drippings (or oil), and corn in a bowl.  Mix and set aside.  Cook the ground beef until lightly browned--drain and set aside.  Sprinkle 1 tablespoon of cornmeal into a greased 10 1/2 inch iron skillet (or casserole dish of comparable size).  Pour half of cornmeal batter into dish. Spread beef evenly over cornmeal in dish. Top with onions, cheese and jalapeno peppers.  Pour remaining cornmeal batter over top of mixture.  Bake at 350 degrees for 60 minutes or until golden brown.

2 eggs
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup bacon drippings or 1/2 cup oil
1 can (17 oz.) cream style corn
1 1/2 lbs ground beef
1 tablespoon cornmeal
1 large onion
8-oz pkg cheddar cheese (shredded)
4 or to taste, jalapeno peppers (chopped)
