Brown Rice With Pecans




4 Tbsp. Vegetable Oil, divided

Heat 2 tbsp. oil in large saucepan over med. heat. Add rice and saute stirring about 2 mins. Add water and salt, heat to boiling. Cook covered over med. heat until water is absorbed and rice is done, about 45 mins. Heat remaining oil in small skillet over low heat. Add pecans and cook 1-2 mins. Pour oil and nuts over cooked rice. Toss with fork and serve.

Yield: 8 servings.

2 Cups uncooked Brown Rice
4-1/2 cups Water
1-1/2 tps. Salt
1 cup Chopped Pecans
