Confetti Rice

2 Cups Tomato Juice  
1 Cup frozen mixed vegetables (broken apart)

Combine tomato juice and mixed vegetable in medium saucepan.  Bring to a boil.  Add rice and pepper.  Cover, turn off heat and allow to stand for 6 minutes.  Fluff with fork and serve.

1 1/2 cups instant rice
1/8 teaspoon pepper
