Cinnamon Streusel Sweet Potato Pie




1 cup dark-orange Sweet Potatoes, cooked & mashed
1/2 cup Brown Sugar, packed
2 tbs. Corn Syrup
1/4 cup Evaporated Milk
2 Eggs
1/2 tsp. Ground Cinnamon
1/4 tsp. Ground Nutmeg
1/8 tsp. Ground Cloves & Ground Ginger
1/4 cup Brown Sugar, packed
2 tbs. Flour
2 tbs. Butter
1/4 tsp. Ground Cinnamon
1/4 cup Walnuts & Pecans, chopped

Preheat oven to 425 degrees.

In a large bowl, mix sweet potatoes and filling ingredients. With a wire whisk, mix until smooth. Pour into pie crust. Place on cookie sheet and bake 15 mins. Reduce heat to 350 degrees, bake 15 mins. longer. Meanwhile, mix streusel ingredients in a small bowl. Sprinkle over filling. Bake 15-20 mins. longer or until center is done. Cool completely for about 3 hours. Serve pie with Cool Whip. Store leftover in fridge.
